So the gist of it is "trust us". The app records, then uploads the recording to your server, you process it, return the transcription, and then, at a later time, you delete the recording.
The source code of the server is available and Framasoft is a trustworthy French non profit organization that is defending open source, privacy and degooglisatio. They are, among other things behind PeerTube.
Good to know. Then, as I noted in the other comment thread, this is just a terrible write-up that skips some key details like, well, everything you listed. If this can be self-hosted then it is indeed a cool app.
