How is this "Amish"? This is just a regular American cookie recipe with some pumpkin instead of half of the butter.

How can Amish people even make these? They can't grow their own vanilla, cinnamon, ginger, or cloves. How can they make the baking powder and soda?

You have a weird view of Amish people. They aren't hunter gatherers, they're not disconnected from trade with the outside. In fact they're rather good at it.
