Depending on how little violence you want, here's a few. I'll put a star on ones that had absolutely no violence (to my recollection)

Steins;Gate (I don't recall much gore, although some characters do die)

Vivy: Fluorite Eyes Song

Hyouka ⭐

Belle

A Silent Voice (no gore, but references to suicide)

ACCA: 13 Territory Inspection Dept. (one character gets shot at one point and ends up in the hospital. It's not violent so much as dramatic)

Mushishi ⭐

Your Lie In April (no gore, but there is death)

Nichijou (horrific violence)

Sk8 the Infinity ⭐

Bocchi the Rock ⭐

Haibane Renmei (some violence in the first episode, but super worth watching)

Planetes (very little violence)

Noir (buncha people die, but there's never any blood)

Megalo Box (it's a show about people punching each other, so as violent as you'd expect from that)

I don't watch a lot of anime, but watched the devil is a part timer recently and yeah.. It was weird and put me off a bit
