What? Is this a trans thing?

Yes, she is a trans girl. Her mother not so subtly misgendered her while asking her to open a jar.

She, when told a man was needed to open the jar, accepted that she, a woman, could not open the jar.

Wait no yeah, I'm just stupid. I thought it meant the mom meant that OP wasn't able to do it because they were assigned female at birth and wouldn't be able to open a jar. Hence, mom not accepting op.

Sounds more like mom saying that OP could do it, being amab, but as a trans female, op decided that not being male, she would not make a doomed attempt.
