Made my own Cincinnati chili

I do weekly baking challenges and decided to do Cincinnati chili since it's not a true regional delicacy unkess people argue about it anytime it is brought up. My friends have lived here in NW Ohio for 3 years and mever tried Skyline, so i brought it over to them. I forgot the oyster crackers, and they were hesitant to put the full mountain of cheese, but over all they enjoyed it.
@BakerBagel the cheese needs to be finer, melts better.
This is literally how it’s served if you were to buy it in a restaurant. An unmelted mountain of cheese over a weird sweet sauce and noodles. Disgusting.
@stonerboner Except the cheese is shredded finer and melting on the bottom and maybe edges.

Attached is how it is sold at Skyline Chili, the most popular establishment in Cinci to buy this chili. Note the giant pile of unmelted, wide shredded cheese. It’s not an opinion, it’s a fact. It being gross is my opinion, though
Most do have the cheese a bit finer than i did here. This was just pre shredded cheese from a bag. Of course, if you are actually concerned about getting the cheese melted, you should order it inverted with the cheese on the bottom
@BakerBagel @stonerboner it's not that it comes melted, because it's fine it melts (except where there are onions if you get a 4 way).
I just grabbed a big bag of shredded cheddar from Kroger. I'll keep that in mind and get a block and shred it myself next time though
