Just wanted to chime in and say I personally found Gnome thoroughly underwhelming for a touch screen. Like you'd think it's a good fit but it's just janky in practice. I've had much better success with KDE. In the Plasma 6.4.0 changelog they specifically mentioned that they have touch based devices in mind. I feel like with Gnome it's more of an afterthought.
Interesting stuff! I might have to give that a try then.
Seconding Plasma, it worked great with my touch screen.
