Trying to replicate my local sushi places dishes so I can make them at home but don't know what salad greens they are using

I think one of them is a type of lettuce but indent know which type

I see arugula, lettuce (romaine?), green onion slices, and nori (dried seaweed strips; often found in Asian grocery stores in my region). The dried nori is likely from a spice jar because it also looks to contain sesame seeds. I buy some of this to put on rice and eggs sometimes, attaching picture below. Not sure about that yellow, but maybe squash?
