My intent is to host all of my things in my network cabinet.

I want to create VMs on my Unraid machine and have the thin client remote into it.

What would the best type of thin clients be for kid workstations without breaking the bank towards school, internet, streaming, and light gaming?

Make sure your think clients support graphics processing offloading - a very nice feature of RDP that really sets it apart.
