Hi, I want to start running and I'm searching for a simple app were I can track my tour as well as getting audio hints for interval training without giving my health data to some data mining company.

You should try OpenTracks, the UI is really good, and it has all the features you want.

I use runnerup from Fdroid. It can auto upload to runningahead.com ( which is on not foss but a passion project) which I like for getting weekly summaries and as a backup.

I use ulogger-server for this, with ulogger-android running on my phone sending it updates.

To answer my own question I just discovered RunnerUp. It looks good too, as it seems you can set running intervals which I was missing at the other two apps. I will test them recently and report back
