I have a similar setup to the one you described and I'm planning to buy myself a Sim cockpit for Christmas. The decent ones I've seen so far start at €300, I hope I'll be able to snag one for cheap on the second hand market.
I have a simple aluminum chassis and seat from Advanced Sim Racing.
I used a DFGT attached to a desk from 2010 to 2022. I'm glad I upgraded but I was able to have plenty of fun along the way.
