I've done pate one time and it's not worth it. So I buy it once in a while as a treat.

100% agreed, its a pain in the butt to make, better to do in large batches... but then you end up giving everyone you know extra bottles.
I usually buy my Pate, but I'm totally going to give it a shot. I think I'd swap out the cooking oil with more ghee.
Depending on the flavor your going for, different fish sauce can have a huge impact. Make sure you like your fish sauce on its own!
