I never heard of this. From what I read on wikipedia it seams simillar to kombucha - non/very low alcohol level, carbonated and chilled drink. Maybe I will try it, this version and the original made from corn.
I make my tepache with a cheesecloth...so, open air. Is it supposed to have an airlock?
Idk. Everyone I saw did the cheesecloth method but I have airlock, so that's what I used.
Interesting, but I thought that tepache was specifically an aerobic ferment. I wonder how the end result differs
