If that's a scalloped or patty pan squash, like, so much. My favorite is to slice it, egg it, bread crumb it, and bake it.

Slice it into half-moons, toss with olive oil, salt, garlic powder and roast at 400F til the edges get crispy - soooo good with a squeze of lemon!
