Whatβs a delicious Romanian dish thatβs easy to make at home?
I would say polenta (mΔmΔligΔ in Romanian) is the easiest to prepare - https://www.chefspencil.com/traditional-romanian-polenta-mamaliga/
It's not a meal by itself, but it's delicious with telemea cheese (you won't find any outside of Romania, can probably be substituted by feta cheese best), sour cream and a fried egg on top. Add a smoked sausage and you got a feast :)
How is it typically celebrated?
It's a public holiday and everyone spends it in their own way. People go to picnics, visit family or just chill at home. There's parades as well in most bigger cities.

Well, you are right, no one goes to picnics in december, but people in Romania visit their family and they celebrate the reunification day togeder.
Depends if the weather is decent or not, but grilling stuff and spending time with family in nature is common where I'm from.
