With the holiday season here, although you may not be getting a Vision Pro, it may not be a bad idea to record special moments with spatial video. Just in case.

The tradeoff being that these videos are limited to 1080p30.

I'm guessing it's fine.

The high refresh rate is needed to keep you from getting sick from head movement not being tracked fast enough. 30FPS playback shouldn't feel any worse than watching a 30 FPS video, provided head tracking still happens at the proper rate.
