Honestly, what the fuck. You can make this so so good. You can:

  • sear the Italian sausage and use the residual fat to sweat the peppers and onion
  • deglaze the pan with some dry red wine (one for the food, one for your tum tum)
  • put the entire pot (I do every step in Dutch oven, enameled cast iron) in the oven and bake for 45min
  • season to taste, schlup it into a bun (handmade if possible) and call it a day.

Not that this is a bad meal, but a bit of a time and love will go a long way.

She did everything but the pan deglase and bake the buns herself, although they are actual Italian rolls made at a local Italian bakery. She didn't use a Dutch oven because she was trying to recreate the style of flavor found in the stuff slung at your local carnival/fair/amusement park, which is cooked on those giant flat iron grills. She did cook the veggies along side the sausage, but drained most of the oil and grease because we're older and try to look after our health.

Flat iron grill like a Blackstone? NA here don’t really use that to cook personally. Smart draining the extra fat though! Cheers! Hit me up if ever you want to recipe share.
