[Half Life 3 (HL3) doesn't count as we already know that game is still a long way off from coming out. Like another 5 or more years.]

Jak & Daxter. I'd even take a reboot. Precursor Legacy is damn near perfect but 2 and 3 could benefit from QoL improvements for sure
