I'm tired of spotify giving me random issues.

What's a good replacement for this?

Deemix to DL all your music. And media servers like JellyFin/Emby/Plex to host the data. That's the only way to get the best Music Exp.

I was thinking about setting up a jellyfin server that could be publicly accessible from a domain I own. Something like jellyfin.neocamel.com, which would point to my jellyfin server on my home windows PC, but it sounds like that opens up some pretty serious security concerns.

I think you can set up a cloudfare tunnel to alleviate security concerns and it seems like an easy setup

I haven't touched that aspect so can't really comment on the security aspect. But if it's behind PWD and stuff, it should be good IG.
