I'm not sure yet if I'm honest, I'm kind of leaning towards a relatively simple crossbody or satchel type bag with a flap and buckled straps. The main reason I've not gone to bags yet is just size, I mostly use offcuts so I simply don't have any larger pieces to work from. I did however get a fantastic deal on an entire goat leather side because it has a few cosmetic blemishes which might be big enough for that kind of project. Something a bit like this:

That's a really simple design, it'll go with a lot of outfits and it's a good side. I wouldn't know where to begin with that hide...
Its kinda daunting, I've never worked with a single large piece before, all the offcuts are weird shapes, lengths and thicknesses which I find fun to use as I have to be creative with my choices. The hide was 'only' £20 but I don't want to waste it.
Yep, you're stepping into the unknown and it's daunting. It's not nice wasting money, but I'd say the learning from doing it wrong is money well spent
