I'm not sure I understand the point.

I don't see anything wrong with the joke Gordon made, the lambs are bred and grown for slaughter. It's not like what he did was a greater level of disrespect than what those lambs have faced and will face through the process of their lives as meat stock.

Yes it's a joke in poor taste, but it's also a joke that highlights the reality that these animals are used for meat, they are alive now, but the way the industry workers care for them always comes back to how they're eventually going to be "yummy", and there's no amount of "wholesome farms, ethically raised" that takes away from that. To a certain extent humans have to make these dark jokes to help distance themselves from the emotional cost of slaughtering and processing a living creature.

If someone is offended by this joke, maybe that's a sign that they're uncomfortable with the modern mass production of meat in general, and they'd be more comfortable within themselves if they ate less meat.

Yes. It's not possible to respect these lambs or consider yourself a friend to animals while looking forward to eating them. Not without playing tricks on your mind. The definitions of friend and respect simply don't allow for simultaneously accepting a cruel fate.
