I have no answer but I'm procrastinating redoing my set up too.
I'll probably stick with omv.
I just gotta find a way to back it up as well as my docker. Every time I think I figured it out something screws up and I need to start over.
I'm honestly thinking of just running debian with gnome or something... Setting up regular smb shares and installing docker. Then DD the entire thing monthly for back up. ... Might not be the sane choice but I feel like it's more of a fail safe for me and my abilities.
