Ideally, I think the best way to get people organized, and connect those organizations would be an app or website that connects you with people nearby and shows nearby groups. The service would allow polls and voting to reach consensuses on issues, allowing users to join based on what issues they care about, and then plan actions to further goals related to those issues such as protests or potential candidates, etc.

But that doesn't really exist yet, so how do we do something similar? And how to reach out to people to get them engaged?

Have you researched? Without outing myself, there's local websites for my city that I use to find how to participate.

Facebook unfortunately is still where a lot of folks go. Nextdoor, is another one. Heck, even craigslist has posts about upcoming protests.

Places with a local bulletin board, like coffee shops also have events.

And honestly, in this current climate, I'm suspicious of any polished app/website for protesting that could give away my identity as a attendee. Police have a lot of experience with keeping tabs on these things.

While I understand privacy concerns (hello from Tor), I think having some kind of loose tie to a physical identity would be better than true anonymous, since that could easily be astroturfed by bots or feds. I think that kind of organization is important, especially for protests, but I'm talking about wider organization in general.

With your concerns, how would you suggest getting people engaged? Something like a mastodon account that just posts dates and locations and takes feedback assuming its in good faith? Matrix chatrooms? Honestly asking, how would you get people together? I'm very interested in converting upvotes into praxis, despite the terrible exchange value.

There's a bunch of local organization going on in my state. Look for local mutual aid organizations. Everyone is networking like crazy right now.

If you happen to be in colorado, I can point you in some directions.
