I’m not sure I understand your question, my domain is with namecheap but my mailservers are pointed to google, the wildcard email is at the mailserver level, not with the domain registrar. You can just keep using google mail, you domain doesn’t need to be with google domains
Buy from any registrar then use cloudflare as dns hosting. Cloudflare support wildcard catchall email forwarding for free.
