For 1k i would start with a Unifi UDM-Pro, a Intel NUC and a Synology NAS.

Imop you could use Watchtower for your docker updates :)

Cool setup, very similar to mine. I like your cloudflare tunnel usage but I think yoir JBOD via USB is a bit off
