I am currently using TrueNAS Scale on a small NAS. It is used for both basic storage and hosting services like Jellyfin. It was easy to set up and is simple to manage. So far I'm pretty happy with it. It's not so friendly for customisation but that's a feature in this case as it means you can't easily break it.
I'm Australian, when I was younger I didn't even think about the fact that border security might want to check my devices. I flew to Japan and back with 3 external hard drives in my pockets. I took them out and put them in the trays along with everything else and no one asked me anything. Edit: FYI law enforcement, the drives contained no copyright material.
Debian Unstable on my laptops and desktop, Debian Stable on my server, Windows 10 is dual booted on my desktop for gaming.
