What I settled on was in a similar vein - 3x a week full body workouts. But it's barbell based, focusing on compound lifts as they're the biggest bang for your buck, and then a couple of accessories with dumbbells, takes about an hour. And there's built-in progression so it's always grinding upwards. I started out at about 175lbs bodyweight at 25% body fat, couple years later I'm at 210lbs and around 16% body fat. Never felt better.
To track everything I use the boostcamp app, its free and loaded with a bunch of programs. The ones I'm talking about are 531 and tactical barbell
