I am having a mental debate on what OS out of Unraid, TrueNAS, or Proxmox to run. I recently acquired some enterprise server hardware for free:
I am running a g9 pl380; 13x1.92tb ssd's, 2x 2699v4, and 24x32gb ddr4 ecc.

I have an unraid setup which is just an old gaming pc. I really like the GUI, containers/apps, and of course mixing drives. Unraid makes setting up game servers, pihole, any containers super simple and straightforward. I am not the biggest fan of the VM's in Unraid which is why I am considering using something else now. The downsides of Unraid at this point is that I have 13 matching drives already

My end goal is to have "cloud" storage/NAS, plex server, game servers, containers, and easy/straightforward virtualization.

Proxmox is likely what you are looking for. You can find guides on how to use it online.
