My recollection is you need to "talk" to each animal once a day, every day.
I just assumed it was petting them. But yeah, walk up to them and press a button and look for a heart. Do it every day. If there's a grey storm cloud thing instead of a heart then they are grumpy, make sure you didn't lock them outside overnight, make sure they have a heater (especially if it's winter), make sure they have food.

Make it a habit to check on all of your animals every day. You'll keep them happy and youl want to see if they produced anything anyway.

How many hearts are needed for the large products? Its the only thing I need for the greenhouse and to begin my ancient fruit farm
Premium drops are random, determined by a formula that takes into account friendship, mood, and daily luck (for ducks and rabbits). There's no clear cutoff value. More is better, of course.
Chocken will give larga eggs really fast, milk takes a little longer. Make sure they are not left outside at night
How do I ensure? I used to keep doors open at all times.
And also how fast is chicken? Mine are still 0 hearts
Its ok to leave it open if its not winter, but if theres too much debris (Stone and logs) the animals may get stuck.
About the chickens, I think the end of the first week after they start giving eggs

Speaking of winter. What does the heater do? I have one in each of my animal places
It only works in the winter. If you dont have one in the barn/coop, all the animals who Live there will get cold and be sad the next day. Im not sure if it makes you lose friendship or just the quality of their produce that day. You only need one heater for each barn/coop.

In winter, yes. Animals will stay inside all season
