That lettuce looks very AI generated. I don’t believe it is, OP. Just a general comment about the shiny uncanny quality of your lettuce.

Probably the overprocessing of iPhone camera.

It is butterhead lettuce which is softer than iceburg lettuce. The softness makes it much easier for wrapping.

Yes it tastes surprisingly good even without added seasoning. The paneer itself has enough salt and taste. The texture is perfect when I wrap the paneer with lettuce.

The protein and fat in paneer really helps make it filling. The portion is a bit small so I will have some fruit/yoghurt afterwards.

It is difficult to feel full without carbs. I am still learning and experimenting.

I bet you don't feel like garbage after eating minimal/no carbs and cutting out sugar. Keto friendly foods have seriously changed my life and my view on all foods. I no longer feel bloated, or 'full'. I feel satiated, eat proper sized meals and don't get hunger pangs anymore.

The only time I feel like trash after eating (which people associate with being full) is when I cheat and eat carbs once every 2 weeks.

I feel people how forgotten why we eat. Glad too see your meal, looks great by the way :)

You just need more fat and protein. I've been doing keto for awhile and meals are always satisfying. If your hitting your protein goals then just load up on fat until your not hungry. Avocado, cheese, sour cream, etc

Sweet chili, lime and fish sauce would be perfect with this.

I am trying to limit my salt/sugar intake so having it plain this time.

Even just some lime juice, black pepper, maybe olive oil would probably be great! I might try that with tofu.

Yes. I had the paneer pan-fried in olive oil. I might try adding balsamic vinegar next time.

If your doing low carb all day, you probably want to increase your sodium intake overall. Low carb reduces blood sugar levels, which reduce insulin levels, which impact how much salt the kidneys retain. Some people when getting into a fat burning metabolism can have low electrolytes while their body adjusts.. sometimes this is called keto flu - increasing sodium intake while adapting helps avoid this

You are right in general but I have hypertension as well, so I need to be cautious with sodium.
