Get Mimestream. I’ve used it with Gmail for years. It’s not an email client. It’s a gmail client. It’s absolutely first-rate. A true Mac app, in terms of attention to detail.
I’ve needed to help a few clients with this problem. Google recently started enforcing oAuth 2.0 for their accounts. I could be wrong, but I remember reading that OS X Sierra and High Sierra don’t support oAuth 2.0, so you can’t use Apple Mail unfortunately without upgrading.
Have you considered using an alternative?

Google still supports plain old IMAP/SMTP with app passwords.
Starting in autumn of 2024, you and your users must use OAuth with third-party apps to access Gmail, Google Calendar, and Google Contacts. OAuth is a more secure access method. The common solution on Google with the App password selection doesn’t show up as an option anymore when I use a browser to log on.
App passwords is a solution for you. It requires 2FA enabled in your account for it to work / show up.
App passwords can only be used with accounts that have 2-Step Verification turned on.
