What I find interesting is that, for every microwave I've had, changing the power just changes how long the microwave is on. Much like an electric stovetop, where full power means the element stays on, and medium power turns it on and off intermittently

Yep. When I bought my last one I intentionally picked up a used inverter microwave. Their party trick is actually scaling down the wattage. Means you can run off batteries easier and supposedly lower settings cook more evenly.

I knew my current, quite cheap doesn't do it like the one my parents had during my childhood. That one made a way more consistent "cooking sound".
