Arte has a German docu, and TED talks has some decent presentations.
Something more fictional would be the series Pose, or Veneno. Sense8 has a trans character, but doesn't go into the topic itself so much, which can be nice.
As to books, I've tried a few fiction ones but didn't find them particularly good.

Yeah there's this one woman who has been a busdriver her entire life and comes out to her boss, it's even on camera. She'd always go into nature to be herself and would take pictures, which I really identify with.
It might have been Swiss German, in that case just have eine Mass.
