Either that or stainless steel makes it worse.

Stainless steel makes everything worse. It's the worst material for a beverage vessel

I drink my coffee from a ceramic mug and it's pretty good

I drink coffee from a stainless steel vacuum flask. It tastes fine. I can't tell the difference.

Those flasks typically have a thin plastic layer

Might sound odd, but give it a try: put a pinch of salt in your coffee. Just a very small one. Helps even with the most terrible coffees.

do you just not have ceramic or glass cups

I do, but not with lids that travel well.

Nah, coffee in ceramic cups also tastes awesome! You should go to a speciality coffee place and let them recommend something based on what you like :) Don’t go to Starbucks or the like tho

Holy shit you could be onto something.

All the places that have god-awful coffee run that coffee through a stainless steel vessel at some point in the process. Weird.
