We bought a countertop convection toaster oven that preheats within ~5 minutes. As a family of 2, it has pretty much replaced our oven usage, but a larger family might not like it as much. It can fit up to a 9x13 pan so that's a small sheet pan or most casserole dishes.
It's really nice that it doesn't make the kitchen hot. It can also air fry decently, not as nice as a standalone air fryer, but it's way more versatile. Ours is a ~ $300 Calphalon, pricier than most, but we use it almost daily, and the cheap Oster one we had before only lasted about a year. I'm sorry this sounds like an ad.
It sounds like the best you can do is reach out and encourage the people around him to keep an eye out. They may continue to enable him, but there's often a point in which even fellow addicts can see that someone is really suffering and needs help. You've also mentioned that you separated before, and he cleaned up, so that just might be the case again. Maybe you two really do need to separate permanently so that both of you can grow. Regardless, do what you can to help him, but your primary focus should be on your needs. Definitely talk through this with your therapist as well.

Yeah I just can't hear over the phone most of the time. It's somewhat better on ADHD meds. It's a lot worse when my allergies are acting up. I find video calls somewhat easier just because I can focus easier if I can read lips and body language.

Yes, a flexitarian is a part-time veg but still sometimes eats animal products. A vegan does not consume or use any animal products for ethical reasons. If you consume a vegan diet but still buy animal products to wear, clean with, etc, then you consume a plant-based diet but are not technically vegan.
The problem with saying plant-based is that it implies "based on plants" with no rigid definition. Some people think it means "vegetarian but not vegan" or just "mostly plants." I have even seen products that contain animal products that I am allergic to marketed as "plant-based," so it's just not a good term for me.

That would be extreme even for Texas. Texas has laws in place to prevent HOAs from prohibiting water conservation efforts such as xeriscaping, growing native grasses instead of exotic, rain barrels, etc. Most of Texas undergoes drought restrictions already. If we didn't, we would certainly run out of water. Banning water conservation would be stupid even by Texas standards.
Granted, Texas also does stupid shit such as restricting water usage in communities while pumping out that same water to sell to 3rd parties.

Yeah I've seen people recommend ChatGPT for meal planning and recipes, and it's mostly fine for common, simple recipes but it does super weird things when you ask it for something nonstandard, that has a lot of variations, or with dietary restrictions. Like it repeatedly gave me recipes with my allergens with a note to check package for said allergen and other weird things like claiming frozen vegetables take 10 minutes to roast in the oven. It's useful for certain things but it's not really intelligent.
