Sausages, hash brown, fried mushrooms, fried bread, bacon, black pudding, baked beans, fried egg.
... And now I'm hungry again.
egg soboro right now: crack an egg in a pan, constant stirring, 8 minutes or so at the lowest heat, super fluffy, flavored textured egg curds.
I made this today with fresh eggs from a farm around the corner with fresh garlic and tomatoes from my garden and sprinkled with celery salt and parsley.
sounds great, except I don't know what celery salt is.
what is that?
oh, literally celery seeds ground up with salt.
I don't think I've ever cooked with it before. I'm going to have to give that a try, that's definitely a good combination.
Yakisoba with shrimp and napa cabbage.
Pho is also a great breakfast food.

You're mostly there.
Fry up the bulk sausage, making sure you chop it up nicely. Don't skimp on the sausage. Make a roux with the grease and a bit of flour and milk. Add flour and milk gradually to your desired consistency (I like it fairly thick), but don't go overboard on the milk or it will become bland and milky. Add fresh cracked black pepper and, importantly, no other seasonings or toppings.
That last part is where every place seems to go wrong these days. Almost everywhere overdoes it by trying to make it something fancy, so they add extra seasonings and things like bacon and green onions and salt. I love bacon and green onions and salt, but they don't go into gravy. And some places forget the pepper. You need pepper. And of course, most places are very skimpy on the actual sausage, even though it's cheap.
Anyway, once done, apply liberally to your preferred biscuits. Quick, easy, delicious.
Ah, right, pepper! I agree the pepper is important. I sometimes add some tobasco too (sorry!)

Steel cut oatmeal with maple syrup and almonds and shredded coconut.
If I have to pick one item, a breakfast taco with chorizo, egg, and cheese.
For a savory breakfast, my go-to is tofu scramble. I keep my spices premixed in a mason jar so it's really easy. Oil in a pan, crumble up the tofu, add spices and a can of black beans. If I'm feeling fancy or have veggies I want to use up, I'll fry those up a bit before adding the tofu.
For dessert-breakfast, (vegan) waffles with maple syrup and fresh strawberries is my Saturday morning staple.
If anyone's curious, here's the spice mix I use for my tofu scramble (quantities listed are good for around 6-8 blocks of tofu):
4 Tbsp nutritional yeast
2 tsp chili powder
2 tsp ground cumin
2 tsp black salt (also called kala namak)
1.5 tsp turmeric (for colour)
1/2 tsp garlic powder

Simple Eggy toast: crack, an egg in a skillet break the yolk and place bread on top flip when cooked. Season with salt, pepper, and Valentina hot sauce
Heart attack: can of corn beef hash, fried in a skillet add pepper, thyme and garlic. Cook until P Parts of it are slightly crispy. Plate and add a fried egg, baked beans, and a piece or two of buttered toast
Homemade egg McMuffin using standard deli ham instead of Canadian bacon
Each of these with a fresh brewed latte sweetened with local honey for allergy benefit
Breakfast sandwich. Eggs, ham, steak, and cheese on a poppyseed bun. Honorable mention to the humble breakfast burrito version too
Cold leftover pizza.
I like having congee or pho for breakfast
Sometimes I have fried rice with chinese sausage and eggs
Pan-fried Salmon, Miso Soup, and Rice is good too
Spam or sardines are great with egg and fried rice too.
Omelettes. So versatile. So good. Of all the combos I love bacon and mushrooms in my american cheese omelettes best of all.
Pancakes are a close second.
Eggs Benedict with a perfect lemony Hollandaise
The one I eat most often is overnight oats, just steel cut oats and whole milk with some fruit if I have it. Favorite to eat is probably bananas foster french toast made with home made brioche. Nothing like starting your day with a brown sugar, caramel and rum sauce haha.
That I don't have to make myself? Greek omelette. That I do have to make myself? Breakfast burritos that past me made a bunch of them froze for future me. Or just general food, we don't often have just breakfast food.

Flour tortilla stuffed with scrambled eggs, bacon strips and/or ground breakfast sausage, cheddar cheese, refried beans (optional), and a line of habanero hot sauce.

It's also one of the best hangover cures!
A nice breakfast bowl w/ sausage, egg, cheese, and shredded fried potatoes all mixed together. Throw in a glass of OJ and a mug of coffee and I am set.
It's actually been a while since I made it, since the extra effort of getting the potatoes right loses out to the morning ennui, so I end up substituting the eggs and potatoes for just grits.

Not for me. don't like yolk to strong flavor, don't like white to weak flavor, love egg when blended.
Toasted bagel with cream-cheese and a sunny-side-up egg on top. Two eggs for the two halves of the bagel. Eat with hands knowing that some of the yolk will get on your fingers. It's awesome. I made it for my partner once and she now makes it for herself when she's eating alone.
I don't have breakfast. I drink herb tea or sometimes coffee in the morning. I do make my wife an early lunch around 10:30 after she had her Teams meeting for work.
She likes omelets, I like to show off...
Whisk eggs with any hot sauce you prefer (I make my own fermentations but Sriracha works), herbs you like, salt and white or black pepper, throw the whisked eggs in a pan after heating oil on medium heat, sprinkle cheese and Parmisan for the msg flavor generously and put a tortilla on top of that as soon as possible. Press the tortilla gently so the egg mixture is distributed evenly. When you can turntable the eggs + tortilla around on your pan like a professional DJ, flip it to brown the Tortilla, then turn again for the egg to fluff up.
Anyway 17 Jan 2025, we are 25 years together so my advice, master Omelette du Tortilla.

I discovered this at a wonderful restaurant in Columbus, OH that is now closed, but it's a spicy indian chili-like dish that, when served with a fried egg on top, is just brutally delicious.
An everything bagel with plain cream cheese. I used to make my own bagels and have them all the time, but as I aged I became lactose intolerant, so I tried some of the vegan cream cheese brands, and let me tell you that shit is NOT the same, so I just stopped baking bagels, and I miss them.

Right now, it is southwestern-style Indian upma with eggs and salsa. My wife invented that after randomly picking up a package of instant upma from a nearby Indian grocery and noting that it reminded her a bit of grits. We are afraid to tell anyone of south Asian background of this no doubt sacrilegious interpretation.
Oatmeal flavored with a mix of sweet chili sauce and soy sauce or cheerios.
Colombian Changua.
It's a milk egg-drop soup with cheese, cilantro and stale bread. Its apparently good for hangovers and handles my migraines like a pro.
Noodles, specifically Bee Hoon (rice vermicelli). Mild and feels like is absorbs all the sins of the night before.
For a long time it was Huevos Rancheros, but that got nudged into the #2 spot when I discovered Eggs Benedict.
Usually made for dinner these days but a breakfast burrito comprised of either scrambled or fried eggs, cheese, diced potatoes, with bacon or chorizo, smothered in cheese and a NM green chile sauce.

Fresh-cut honeydew, pineapple and strawberries. I usually have them alongside coffee (latte) with a bowl of yogurt and GF granola.

Migas! It's a TexMex egg dish.
Beat eggs with salt, pepper, and cumin. Let them stand for 10 minutes, then dice a jalapeno and an equal amount of onion. Fry them for a couple of minutes, then add minced garlic. When the garlic is just fragrant, beat the eggs back to foaminess, then add to the pan. Let them set for about 45 seconds, then add a big dollop of salsa and mix. When the eggs are almost done to your liking, add a handful of cheese (I like cheddar or Oaxaca), and crumble in a handful of tortilla chips, the more stale the better. Let everything sit covered for a minute or two, then serve!
I like mine with extra jalapeno, and if I'm feeling saucy I add chorizo.
